I have a really hard time with planning meals. I also need ideas that don't take too long, or don't cost a lot of $$. I have 2 small children and it makes it hard to get things done. I would also be interested in some multi-cultural recipies too.

choose a dish that you can prepare in advance, like beef stew. you can cook the meat in advance and freeze it and when its time for you to serve it thats the time you add the vegetables, its a complete meal by itself and im sure kids would love it. another easy dish to cook is spaghetti. u can cook the sauce ahead and store it, and when you want to serve it then you can cook the noodles.

When you have children it's really important to plan ahead. Nt only would it help you in budgeting. The safest way is to make sure you serve 1 vegetable dish a day, keep them away from soda's and junk food as much as possible. Make sure you always some bread and fruit around the house for when they go hungry in between meals.

When our kids were younger, I never had time to make much either. One suggestion for planning...when you have a number of dishes that you all like, put the names on small pieces of paper. Put them in a jar or envelope. When you are making your list, pull out 7 slips for the week. Menu is planned! Keep the used ones out until the jar is empty. Then put them all back in and start over.
I used to make quesadillas. Make hamburger like you're making tacos. Take taco size flour tortillas and place on a baking pan. Put some refried beans on each and spread it around. Put some meat in each tortilla. Sprinkle shredded cheese in each and fold in half. Sprinkle more cheese on the top and pop in the oven until the cheese is melted.
Chipped beef and gravy might be an idea. I can't make gravy to save my life, so I use the country gravy packets. Make enough gravy to feed everyone. Take a pack of the Buddig slice beef. Tear the beef into smallish pieces and put in the gravy. When it's all hot, it's done. Serve over bread or toast.
