hello! does anyone have any food recipes that can be frozen and eaten later in the week. i am very very busy and i would love to eat homemade food instead of takeout all the time. the only thing that i know how to freeze is lasagne. oh by the way. my oven is really bad (does not heat up very high only up to 500 degrees faranheit) so sometimes the lasagne is still not completely cooked even after 2 hours of baking. any ideas would be greatly appreciated. please include examples for food that can be frozen up to a week and food that can be refrigerated. thanks a lot!

I make this one fairly often because I can make it ahead and freeze it. Mini Meat Loaves: 2lbs gr. beef 1 small onion (finely chopped), optional 2 pk instant oatmeal, regular flavor (.98oz) 2 Lg. eggs 3/4 c ketchup 1/2 c milk 2 Tbs. Worcestershire sauce 1 tsp. salt Glaze: 1/3 c ketchup & 3 Tbs. brown sugar - mix well In large bowl mix all ingredients (except for glaze). Divide into 8 servings and shape into individual loaves in a 9 x 13 pan. Brush tops & sides of loaves with glaze. Bake 35 - 40 minutes at 375. Let cool 25 minutes. Wrap individually in plastic wrap or foil and freeze. To reheat: thaw in fridge. Remove plastic & cover with foil. Bake @ 375 for 25 - 30 minutes or until hot.

I think that anything you cook you can freeze and just reheat in the microwave. I do that, frozen food just needs to be put in the proper container either ziplock freezer bags or tapleware that can be frozen. Sorry I am not much of the cook so I can provide you with any receipes...

Hi piggyxoxo, here`s a quick suggestion, get some baked potatoes, bake them, let them cool, wrap is silver foil or cling film, when you need them, just put them in the microwave to reheat, just before they are cooked add the fillings you like, also you could quickly finish them off by putting them in the oven for a quick 5 minutes to crisp them up.enjoy!gilly

Just a couple of days ago I made a pork roast to serve shredded on sandwiches with BBQ sauce, and that works very well for freezing and eating later. I just package up the meat in small containers that will make a couple of sandwiches each and freeze them that way. I made a 5-lb pork roast in the oven at 350 degrees. It does take a long time to cook initially, I think I cooked it four or five hours until it was done and tender enough to shred easily, but it didn't require much attention or work. All I put on it was some Mrs. Dash, because I'm on a restricted diet, and I was going to use BBQ sauce on the sandwiches anyway. But we'll have shredded pork BBQ sandwiches anytime we want them now for a while, just by grabbing a pack out of the freezer and microwaving it. =)

hi! thanks for replying. i might try it with roasted chicken and maybe beef. i have never done pork roast. stupid question, but when i go to the grocery store do i just look for meat that says for "pork roast"? or is it just any type of pork that can be roasted? the only time we eat pork is when we have bacon. how long can i keep it in the freezer?

I don't eat chicken, but I'm sure it would work well with chicken or beef as well. As for the pork roast, it just says "pork roast" on it when I get it. To be honest I'm kind of new to the whole cooking thing, I've only been cooking a lot lately because my doctor has me on dietary restrictions that severely limit my use of quick foods and eating out. When my mother made this before, we kept the meat in the freezer for over a month and didn't have any problems with it. Just make sure it's sealed well so it doesn't freezer burn.

All kinds of stuff can be frozen and thawed later. Most pasta dishes, especially lasagna or manicotti. Manicotti might be better for you with your oven problem. Any soups, stews, chilis or tomato based pasta sauces can be reheated from frozen right on the stove or in the microwave. Sometimes I'll put a pot roast in the crock pot for a few hours covered in barbecue sauce, then when it's good and tender and cooked thru I shred it with a couple of forks. That freezes and reheats well, and makes great barbecue beef sandwiches. I haven't tried it with pork, but I have used chicken and it was also really good.

You can actually freeze most foods except vegetables (because they look bad after reheating them). My mother always do this when we were younger (we have a small food stall back then). She would chop the chicken (any size you prefer will do) and then boil them in water with salt and pepper. After boiling she takes out the chicken, let them cool, put them in sealed plastic containers and place them in the freezer. She does the same with the chicken stock. So what can you do with this? The chicken stock you could boil and make into soup (just add whatever you want to add later on), the chicken you can deep fry, shred and add to the soup, pop in the oven to brown or you can even pop it in microwave to heat and serve as it is.
