Tonight I had tofu fried rice. I'm on the 40-30-30 diet, and I'm a vegetarian.
You cook up 2/3 cup of firm low fat tofu in 2 t. safflower oil until it's brown. Then you add 1 cup of carrot, brocalli, mushrooms, onions, and red pepper. Once that is done you add 3/4 cup of cooked brown rice. Season with soy sauce and pepper.
I also had a 2 cup green salad with raspberry vinigarette.

i just love brown rice with veg i make it alot with for my kids and raspberry vinergarette i like but much prefer balsamic
