I think any time you need to make a major dietary change, the first thing you should do is keep a food journal for a few days. See where his sodium is coming from & how much he needs to adjust to be at his recommended amount. Start by elimating the things he doesn't love anyway- maybe cutting out couple cans of soda (very high in sodium) will leave enough room that he can occasionally have his favorite whatever.
As someone has already said, deli meats are almost always high in sodium. There are some brands that are comparably lower, but still high in general- kwim? You can ask the deli for a copy of the nutritional information that's on the package and decide if it fits his diet or not. Homemade meals are going to be the best way to insure he's not getting too much sodium. To make it easier, try cooking & preparing a week ahead and then package each lunch in the freezer.

Well should be pretty easy to cook his normal food and just avoid the salt. or put less salt in as to what you would normally do
