healthy foods for picky eaters

I am a bit stuck really as my partner is really picky with what he eats. this stems from his childhood where he was made to eat lots of potatoes and other things he didnt really like and no will not eat any of them. This is really a big thing as we now have a 2 yr old who needs to not be picky. My partner eats bread with everything, he will have pasta butties, pasty butties he even eats bread with spag bol?!?! weird i know! but he will not touch veg or any type of sauce including gravy. Does anyone have any ideas on how i can get him to eat more healthily for our daughters sake i dont really want her growing up to be fussy. thanks

I'd say start out with veggies that are sweet/tasty that most people like. Some would be sweet potatoes/yams and carrots. They are both sweet and generally appealing to people who are new to veggies. Then work up to brocolli, peas, and other greens. Find out if there are any side dishes that he likes at restaraunts that are veggies. If he likes bread so much, make him stuffing/dressing and add some finely diced carrots, peas, celery and onion. Slowly incorporate veggies in places like that where they enhance the texture and flavor and don't have to be eaten alone. Shred some veggies and put them in hamburgers, meatloafs, casseroles and other hidden dishes ;) Try adding some veggies to pasta, lasagna, dumplings.

I think you've got a battle ahead of you, but the best thing to do is not force anything, just have a variety of foods available, and set an example by eating them yourself. Perhaps your daughter will be curious enough to try them when she sees you eating them.
