I have a great summer recipe - go to the store and purchase a nice big watermelon. Carry it home or get someone else to do it for you if possible. Cut it into bite-sized pieces, removing the rind, and place in a covered bowl in the fridge.... Eat as desired throughout the day and night...
Ok, I just endulged in a bowl of watermelon and it was delicious :)

There are lots of things you can make in the summer- I like to grill out alot-
How about shish ka bobs? they are fun to make and tasty! Beef or chicken or both- I put cheery tomatoes, pineapple, fresh mushrooms and zuchinni- YUM! throw them on the grill- I also marinate them with Italian dressing.
I also do alot of boneless chicken on the grill- we always cook extra- so the first night we eat it regular- then we make chicken salads (tossed salad), quesidillas, shish ka bobs-- lots of things you can make- Quick and tasty!

Ingredients:
1-1/2 cups crushed whoppers malted milk balls
2 cups vanilla ice crema softend
9 inch graham crakcker crust
2 cups chocolate ice cream softend
hereshey chocolate shoppe hot fudge topping heated
whipped cream
Directions:
fold 3/4 cups crushed malted milk balls in vanilla ice cream spoon in to bottom of crust cover freeze 30 minutes ou until firm fold remaining 3/4 cups crushed malted milk balls in to chocolate ice cream spoon over vanilla layer freeze 30 minutes or until firmat least 3 hours let stand room temperature 15 mins before serving serve wedges with hot fouge and whip cream freeze left over pie

If you are cooking on the grill you can cut up some potatoes into bite sized pieces and put individual servings in tinfoil packets along with some onion, butter and seasonings. Put these on the grill and cook them while you are cooking your meats. They are done as soon as the potatoes are tender, and they are really delicious.

Summer Squash Bread

"Transform your summer squash into a moist, delicious loaf of bread!"
INGREDIENTS
* 3 eggs, beaten
* 2 cups white sugar
* 1 cup vegetable oil
* 2 teaspoons vanilla extract
* 3 cups all-purpose flour
* 3 teaspoons baking powder
* 2 teaspoons ground cinnamon
* 2 teaspoons ground nutmeg
* 2 cups shredded summer squash
DIRECTIONS
1. Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13 inch baking dish.
2. In a large bowl, use an electric mixer to beat the eggs until fluffy. Beat in the sugar, oil, and vanilla. Gradually mix in the flour, baking powder, cinnamon, and nutmeg. Fold in the squash. Transfer to the prepared baking dish.
3. Bake 45 minutes in the preheated oven, until a knife inserted in the center comes out clean.

What about my favourite salad?
FRIED TIGER SHRIMP AND SALMON SALAD (Serves 4)
Ingredients
3 Tiger Shrimps
500g salmon
200g lettuce or other vegetables you prefer for salad
1 avocado
5 tablespoons lime juice
2 tablespoons garlic, fine chopped
1 tablespoon soy sauce
1 teaspoon dried perilla, chopped
pinch of black pepper
3 tablespoons olive oil
Dressing
1 tablespoon soy sauce
1 tablespoon sesame oil
1 tablespoon garlic, minced
3 tablespoons vinegar
1 teaspoon ginger, minced
Steps
1. Slice avocado, mix with lettuce and place on plate.
2. Wash, drain and devein shrimps; wash and drain salmon. Marinate them with lime juice, garlic, soy sauce, perilla and black pepper for 15 minutes.
3. Heat up olive oil in a frying pan. Fry each side of shrimps and salmon for 1 minute with medium heat. Place salmon on salad and place shrimps on top of the salmon.
4. Mix the dressing well, sprinkle on the salad, shrimp and salmon and serve.

A really delicious and healthy use of fresh summer veggies is to make roasted veggies. I take potatoes, summer squash, onions, leeks, parsnips, carrots, bell peppers, tomatoes, and any other fresh veggies that I might have on hand, chop them up into bite - size pieces and then mix with Italian dressing and then roast them either on the grill or in the oven until tender. They are delicious and healthy.
