Baking In A Can - Recipe 3 - Parmesean Herb Cornbread

Wow, I sure hope you are enjoying this wonderful way of baking. It can be rewarding just to know that you have finally found a way to recycle those cans that vegetables and fruits come it. This is an old way to bake but it seems to have been forgotten over the years. Now it is time to renew this wonderful way of baking in cans. This is a follow up of the article Baking in cans. You need to read it before you begin with any of the recipes in the Baking in a can series. PARMESAN HERB CORNBREAD IN A CAN/With Herb Butter 1/3 cup yellow cornmeal 1/4 cup flour 2 TBSP can parmesan cheese 1 TBSP sugar 1 tsp. baking powder 1/4 tsp. salt 1/2 tsp. herb blend or Italian 1. Place ingredients into a medium bowl. Blend with a whisk. 2. Place mixture into a ziplock sandwich bag. Place bag into a 14-16 oz. decorated can. 3. Place 1 tsp. additional herbs into a separate snack size ziplock bag. Label this "Herbs for Butter". 4. Attach recipe with the following instructions: PARMESAN HERB CORNBREAD TO BAKE IN A CAN /with herb butter 1. Remove mix from can. Set aside herb packet for later use. Empty bag of mix into a medium bowl. 2. Add 1/3 cup milk, 1 TBSP oil and 1 egg white. Mix well. 3. Remove any labels or decorations from can. Grease can well with some shortening or margarine on a paper towel. DON'T spray can with cooking spray- recipe will not work in a sprayed can. 4. Spoon batter into can and place on a cookie sheet. Bake in oven at 450 for 23-26 minutes. Bread is done when a broom straw or bamboo skewer placed in middle of bread comes out clean. 5. While bread is baking, mix herbs from herb packet into 1/2 stick of soft butter or margarine. 6. When bread is done let it cool for 15 minutes in the can. Run a plain table knife around edge of bread to loosen it from can. Shake can to allow the bread to slide out. 7. To serve, cut bread into slices the desired thickness and serve with herb butter. Thanks for this recipe. I had baked in a can many, many years ago. As you know I am recollecting my recipes. Appreciate finding these recipes on your discussions. I do like to recycle what I am able to and this is fun besides the recycle aspect. Thanks again for sharing this information.

thanks for this recipe.I love cornbread as well as my dad. I still can't get over this baking in a can.So cool! By the way,those chocolate oatmeal cookies were awesome!

I've been gone from myLot for a few days, so I'll have to go back and read your other baking in a can recipes! I'm going to try them, but have to open something in a can first. This recipe looks like it would be just about the right size for one or two people.

Somehow I missed number two can recipe, so thanks for posting its location. I am probably going to make the cornbread right away, as it is a favorite item at our house. I am making a huge bean salad to go with it. It will be yummy summer fare.

What a really neat idea! I am going to try this and the others. Sounds like a really different thing to bring as a hostess gift for a dinner party too. I have never heard of baking in a can, but this gives me a few ideas for the holidays coming up. Thank you

I am so excited because I got my new stove/oven today. No more cooking in the toaster oven. My boyfriend is hooking it up now. So if I don't get blown up, maybe I'll give this a try this weekend. This recipe sounds good but I think I will like the honey bun cake the best.

I think one is right up my moms alley- She loves cornbread- and she is the only one- My dad is super picky- I wonder if she would do this- I of course will wait til colder weather before whipping this up as a gift- No one in my family turns on the oven in the summer- : ) thanks for another recipe to try out-

This sounds wonderful! I've seen several recipes that were baked in a coffee or a shortening can, but I've never actually tried them! I love Paremsan cheese. I love butter and I certainly love Cornbread. So this sounds like something that my family would love and maybe it will become a favorite of ours!
