Makig Jell-o better?

Where I live we are about to have a major hot spell so I have been looking for light refreshing food. Eating ice cream all the time can be pretty fattening (plus I have lactose issues), so the other day while at the supermarket I noticed some Jell-o. Jell-o is cheap, it's light, it's cold and you can get sugar free versions, which is much better for my waist line.
The problem is, plain Jell-o can be kinda boring after a while. I know there are lots of ways out there to doctor it up, so I was hoping that some of you would share some of your favorite ways to make it more fun, intersting, and tastey.

ooh - this is fun! my family is quite a fan of jello too! there is this japanese variety that is similar but uses seaweed extracts to make the jello consistency. it's called konnyaku. have you heard of it? like jello, you can add tiny peach cubes into the mix or whole grapes, or just buy a can of cocktail fruits and have fun making your own variety. There is this fruit called nata de coco which is fantastically chewy and great in jello or konnyaku.

My sister once boght some agar agar and we made tea gelatine. IT was erally good. There is a japanese store right near me. I will have to go there and check out what they have. That fruit sounds really interesting.

I've seen jell-o fruit salad. Buy a can of fruit cocktail and toss it in drained. I would make the jello more concentrated though since the fruit has moisture too. How about adding frozen berries you buy in bags now? That would be yummy and refreshing! You can also add something creamy to make it like a mousse. what about adding champaigne grapes! Oh, I like that... /.\ ___ /.\

you can make the regular jello in your favourite flavor AND then place thos jello in the freezer till they iced up. take them out and you have nice crunchy jellos'!
if not then, oh well, do jello vodka shots! replace water with vodka. yeah those are great on a hot day.

Jello salad, there used to be a jello waldorf salad that my aunt made. She would get a green flavor (mint maybe) and when the jello started to thicken, stir in grated carrots. Then she would let that layer harden. She would get another layer ready with lemon or some kind of yellow flavor. Then when that started to harden, she put chopped walnuts. Then she had another layer that I think was red and she put iceberg lettuce cut into skinny strips when that was cooler and soupy.
I like knox gelatin or store brand gelatin better. I make jello out of juicy juice or any other all-natural 100% juice and gelatin. Or I use canned pineapple, gelatin, and top with walnuts. We're serious gelatin eaters. It's not just a gelatin, it's a meal!

I have made a lot of different things with Jello. Years ago I got a free recipe book from Jello handed out at a store. Try out www.kraftfoods.com/jello you'll find a lot of good recipes there.
