Looking for Mexican & Cuban Recipes

I love mexican and cuban food. Can you share your easy family recipes. I've tried recipes from the web, but, it's not the same like family recipes. In particular, I love pork recipes. Carnitas, cubanos, anything with pork. Do you have a recipe for really good beans? I really enjoy beans of any color or texture. Thanks

A girl after my own heart! I am particularly fortunate as my hubby is of South American roots. He tells me what his mom used to make and I do my best to accommodate. Enough of the time, mine is as good if not better. Even my son loves it.
Pork is especially used since it is much easier to turn from wee one to dinner than a cow. Plus, it sure does taste good!!!
So, let's see... I cook by feel and taste, so I will attempt to put into recipes :
Silly Easy Grilled Pork
*Pork country ribs - as much as you want/need
Seasoning paste - for 3 pounds of meat -
**1 tbs kosher salt
**1 tsp ground pepper
**2 cloves garlic - minced or run thru garlic press
**2 tbs ground cumin
**1 packet of Goya Sazon WITH achiote OR a dash of achiote paste or powder
***Mix together until well blended
Rub meat with the paste and grill up to your liking. This paste is used for many other foods as a base after cooking up some onions. You may adjust any of the ingredients to taste. Go easy on the achiote, you want just enough color and a subtle flavor.
Pair this all up with either white rice or a can of hominy corn (mote - mohtay) and black beans with chopped onions and cilantro on top. And a nice salad is good, too.
