Hey. I like cooked salted and peppered eggs... I also like eggs mashed with a bit of curry and a little milk, salt n pepper too... But never tried eggs thats been covered or sitting mud and red ones at that... If you like this food, good for you... Have fun eating it...

That is a mouth watering description of the delicacy-I like eggs, but what kind of mud do you cover eggs coz with? Am dying to get my incissors onto the egg coz in a typical Philipino style!

Do you mean you cover it with actual mud... like dirt from the earth? The idea of salted eggs with tomatoes and fish sauce sounds yummy to me. But the mud does not sound so appetizing.

It is a little overwhelming at first. I recommend reading over the guidelines very well, then as you are looking around on the site things will begin to make more sense.

I have seen two forms like this using duck eggs (as youless pointed out earlier. The egg that gets covered in mud I have heard being called a thousand year old eggs. I've had them, but never actually tried making them.
The other, salted duck eggs, still keep the natural color. Boil water & saturate with salt until no more salt can dissolve in the water. THen let it cool, add vinegar, & then add the regular duck eggs in & store for 30 days.

Both of the processes were done to keep the eggs from perishing & becoming un-edible because there was no such thing as refrigeration back in those days, & other ways to preserve food made it a necessity to find ways to make food supplies last.
BTW - I'm someone that can enjoy drinking a bottle of soy sauce, so I'm one of the few that can eat a salted duck egg without too much problem. Even then, the egg-white of a salted duck egg is a lot saltier than soy sauce.

You are right about the saltiness. Studies by doctors & scientists show too much salt in the diet can cause high blood pressure. This is why I almost never do stuff like that, & that it is kind of expensive.

i'm amuse about you drinking soy sauce? instead of eating salted eggs there are many kinds of salted eggs some made it salty but some a medium type only. too much salt may bring us to hypertension. be sonsiderate on using or eating salty food. take care

I eat salted eggs as well but lately my Mama doesn't buy us salted eggs anymore. I kinda miss the taste of salted eggs. I like it with tomatoes only.
I just wonder why it's dyed red why not pink or blue or green? Hmmm...what do you think?

well if your mama dont buy salted egg any more you can do it at home and surprise her that you know how to make them. 1 cup of salt 6 cup of water 1 tspn rice wire and peppercorn for 10 eggs dip in water in a container for 30 days then boil it let cool then then put in the fridge dye it in red to avoid confusion. but there a study about dying a carcinogenic red dye be careful can cause cancer. we only use cripped paper in dyeing.

I think the salted eggs you mentioned are similar to ours. We have these in our country. By the way, I am from China. Our salted eggs are from ducks and we covered them with black mud.

Hi jcyap888, welcome to mylot. I loved eating salted eggs as you've mentioned with tomatoes and fish sauce together with fried fish, meats or vegetables. We always have it at home on stock in our fridge. :-)

yeah i have stock too in my fridge. during rainy day its we alway stock salted eggs and fresh eggs and ready to go. this is our favorite, salted eggs with tomatoes, delicious! i hope we post something about recipe and exchange some ideas for rainy day and we can inexpensive recipe to cut our budget too.! thanks

I also love eating salted egg together with tomatoes and fried fish. It is indeed a traditional delicacy in the Philippines but you can also find it to several Asian countries. Here in the US, if I want to eat salted egg, I only have to go an Oriental store and I can find it in there. My mother once tried doing these salted eggs. What she did was immersed the eggs in water-rock salt (table salt) solution for about a week or two. It came out fine but I think she should have immersed it a little bit longer since it was only the outer part that tastes salty. No mud involved please though I heard some stories like using the mud before. I'm not just really sure if it is true...

yea, its quite tasty.. i love it with tomatoes only.. or vinegar.. =) you can try it as a snack.. i use spoon and i only eat the middle.. just get ready to go for a pupu-moment in the restroom.. =) but it taste really good.. you should try it.
