.info and .biz have quite a bad reputation, on account of the fact that because they are cheaper to buy than .com domains a lot of them have been bought up by spammers and are used to host spam sites like spam blogs and link farms.
I think most people just go for .com as their first option because it is the best known domain extension, the one that springs to mind first when you think about the internet. I have a .org domain myself, just because it sounded the best with the domain name :)

I think that most people choose the .com because it is the most common and therefore likilest to be used when people are looking for something.
Example friend has a site for his poker league, he uses .net because a name like his was used already using the .com
Even though I know this, I still automatically out of habit use the .com then find myself at the WRONG site.
.org I believe is reserved for specific orginations and charities and non for profit organizations,
.gov of course is reserved for goverment use.
Most of the original sites used the .com since this is what most people are familiar with, even those who are aware of the .net and other extensions would prefer to have the .com so that people can find them more easily.
I don't know that the .com can become exhausted at least not easily, since variations can be made just by adding a letter, a dash, or number to something to alter the address. With the variety of number and letter combinations possible there are still plenty of .com available, unless you are looking to keep your .com url short and simple then of course it is possible you won't find it available but that can also be said for .net

The .com extension stands for "commercial" and is most commonly recognized. That's why many business prefer to use them. The .net stands for "network," and is most commonly used by Internet Service Providers (ISPs). The .info indicates a "resource" website. The .org stands for "organization" and is most commonly used by non-profit groups. The .edu is commonly used by schools and other educational websites. There are many more less used extensions, each for their own purpose. So it mostly depends on what kind of site it is being used for.
