Most times when I make marinated chicken dishes, they end up tasting dull and rubbery. And, for years, I just assumed I was over-cooking the chicken. And, for that reason, I rarely serve chicken, because it always ends up tasting strange. Which is unfortunate, considering that chicken is a really healthy meat to serve to one's family.
Anyway, the other day I was watching a cooking show and found out some very interesting information on cooking chicken to perfection. The chef on the show mentioned that you should be sure not to marinade chicken for more than two or three hours. Otherwise you'll end up with rubber chicken. That makes perfect sense! I don't know why I hadn't thought of it before. Most times my chicken sits in marinade from early afternoon until I start cooking it around six PM in the evening. No wonder it tastes like rubber! After many years of preparing chicken the wrong way, I am looking forward to getting it right. Hope this cooking tip helps you as much as it has helped me.
Do you have any useful cooking tips that you would like to share for all the aspiring chefs on My Lot?

i always marinade my chicken with the mccormick packs for about 3 hors.make sure you poke alot of holes in the meat so the chicken soaks up the marinade, and it wont come out dry.the more you marinade the tastier it is.then put it in the oven at 325 for 30 minutes.i always do that and the chicken comes out great.also make sure your chicken is thawed out all the way before you cook it.best and quickest way to thaw out your meat,is put your meat in a non stick teflon pan to thaw out.the heat from the pans for some odd reason, defrosts your food quick.just make sure you turn it over so you do both sides.this saves alot of time, and especially if you forget to take something out for dinner.you can have a meal in 1 hr.thawed and cooked.

heres a nice tip, get a chicken and put it an oven for a good 30 minutes, while spreading a lot of butter all around it. That way you make one of my favourite foods, butter chicken!
