Vegetables! I just can't cook them.

I don't know what i am doing wrong. Maybe i just dont like veggies, I just cant find a way to cook them so it doesnt taste as bland and flavourless. sweet veggies is not a problem. its the salty ones that baffles me.

well, first, don't over cook them. Carrots, turnips can be "over cooked, but most others need to be handled a bit more gently. Greens should be tender, wilted - unless you are dealing with something like Navajo spinich that is so bitter you have to boil it in 3 different "baths" to get the bitter out.

I have found that steaming vegetables is MUCH better than cooking in water....expecially with saltier vegetables.....when you cook in water, it'll tend to leech out all of the flavour. Try just steaming them. ALSO very important, don't overcook...MOST vegetables, are actually better if they still have a little "bite" to them....this is more a personal choice, of course, but I have found that when I steam say carrots, I won't cook them until soft. I cook them so that they have a small crunch to them....better flavour, works for any "hard" vegetable, soft ones, steam for only a few minutes for full flavour.

Why don't you try to oven bake them. This is what I do. I cook whole potatoes, carrots, baby marrow, basically any veggies of your choice, for 5 minutes then I put them in a casserole dish with lots of olive oil and bake them for 45 minutes in the oven (180) Sometimes I sprinkle them with cheese and put it under the grill till the cheese gets tangy.

you can sautee peppers and some snow peas by just flipping them in a pan of EVOO and sprinkling em with garlic powder and onion powder, pepper and paprika. give em a few minutes on low to med heat and youre done. steam everything else but watch your times. also try grilling veggies. corn on the cob in foil with a pat of butter and seasoning comes out so good.
