I think that is really up for interpretation. Some say Gracie is but he lost in quite an embarrassing fashion. I still think is incredible though. Others believe that Randy Couture will go down as the best. He was a great fighter but not the best, IMO. There are weight classes so it's hard to say just one guy is the best.
Fedor Emelianenko in Pride is an amazing beast of a fighter who only lost one match. He's definitely up there.
I think the UFC middelweight right now would go to Anderson Silva although I prefer Rich Franklin.
I guess I didn't help much, huh? I just know that Ken Shamrock, as tough as he thinks he is, is NOT the best and never was. Even though he says he was. Blah.

LOL, yes I am female. I follow UFC and worked in pro wrestling (writing not wrestling) for 10 years so I suppose I am not a typical female. But I really enjoy the competitiveness and the training that the guys in UFC participate in. I respect Dana White a TON for what he has done, taking UFC from what people thought was barbaric to something on the cusp of mainstream popularity. I don't, however, like football. ;)

Well for me it would depend on the day of the fight, if two fighter will battle there are lots to consider, the training he did before the fight, age, and condition. But as of now if we base them on fight that took place i think mirko is the best in ufc, even if gonzaga did beat him. Randy would come in close. but in the world of MMA no one will beat fedor at this time.
