What cooking knives do you have? Which ones do you use most often?

Knives are one of the most important tools in my kitchen. I've broken a lot of them lately. I'll have to replace most of my steak knives. What kind of knives do you use in your kitchen? Which ones do you use most often? Do you break a lot of knives? Which knives do you use for what? Example: like serrated for cutting bread

I have a meat knife, a large vegetable knife, and a small vegetable knife. I have a couple of other meat knives that are not that good, and a serrated cut anything knife that does not, plus a bread knife with a serrated edge. I really should get a decent knives as most of them came as gifts, were inherited, or I bought them at garage sales. But I guess to get a good set, it would cost me an arm and a leg, and I would rather hold onto mine.

Good ending, I didn't even see that coming. Smile Sounds like a good assortment. I'm lucky, my husband can sharpen straight knives, but I don't know what to do with serrated knives that go dull. That's where my knives came from, too. Inherited, gifts, and garage sales. Maybe there will be some good responses that help us both out. Take care

in my house i have a variety because i love to cook, and i have to have a good knife.i have a chefs knife which is great for slicing, choping, dicing etc,the knife is curved so it gives me a more precise cut, then i have bread knife, the serrations on the blade make it easier to cut the bread.then i have pairing knife which is great for peeling shrimp, potatoes etc, utility knife which i just mainly use for tomatoes, steak knifes ofcourse,to cut my meats, carving knife, boning knife which is great to remove the bones from the meat,a fillet knife which is great for when i prepare fish so i can get under the skin of the fish, decorating knife so i can make designs and fancy cuts on my garnises, and i think the last one is a cheese knife which i use to cut my cheeses.

I have an EverSharp knife that someone gave me as a gift and I love it! It will cut anything, and I mean anything! I also have a set of knives from Pampered Chef, they are ok, but they don't seem to be sharp enough for me!

EVerSharp, is that like a Ginsu, you don't need to sharpen it ever, supposedly? Sounds like a great gift. I only have the Pampered Chef paring knife, it seems good to me. Thank you for your response and take care
