I love to cook, but in the summer I am all about meals that are quick and easy. I am starting to run out of ideas for dinner. Can anybody share with me their favorite quick and easy dinner? I like just about everything and I'm always looking for new ideas!

Hi,here in my house we go crazy over PANINIS.You take 1 sub bun(per person)cut in half.Sliced sandwhich meat.(chicken/ham/pastrami etc your choice which one ),Sliced mozerella(cheese slice).Put the meat on your sub bun with the cheese on top,add some canned mushrooms(if you like).Close the sub together and put in a waffle maker. The grill plates of course.Close and press firmly to make it flat and crispy. When its done, take it out and open it and spread some helmans mayo on the meat(or mustard)and its finished.Serve it with a side salad or macaroni salad.Yum,Yum.

Family dinners don't have to be expensive or involved to be tasty. Try this super-simple dish. You will need 6 large eggs (omit up to three yolks for low cholesterol version),1/2 cup cheese, 1/8 tsp. salt, Leftover odds and ends (veggies, ham, beans, etc.), 1/4 tsp. Italian seasoning Preheat broiler. Combine eggs, cheese, and salt in a bowl. Spray 9” skillet with cooking spray, and warm over medium heat. Add leftovers and cook until heated through. Reduce to medium heat, and add egg mixture. Cook until almost set (approx. 3mins.) Sprinkle with seasoning, and place in broiler until fully set (approx. 3mins). Cut into wedges, and serve.

Everybody here has good ideas! Quick is what we need in the summer. Our apartment gets hot quick with the stove on! We run the air and the place feels good all day until I make dinner. It then gets about 20 degrees hotter!!

Hello and welcome to MyLot chicky401. I'm with you on the quick and easy meals. Last night was one of those nights. Hubby came home hungry and didn't want to wait an hour for a full meal, so he requested tostadas or manwich pizza. Both are cheap and easy to prepare too. We decided on the pizza as it takes only 30 minutes from start to finish. If you like manwiches (aka sloppy joes) it's pretty easy to make. I use a Betty Crocker pizza crust as it's very easy, only requires 1/2 cup of water, and tastes pretty good. Just press in onto the pizza pan while the sauce is cooking. Once that's done, just pour on the prepared manwich mixture and spread to the edges. Top with your favorite cheese and bake for about 15 minutes. Mmmmmm.

Or, if you're like me and roast in the kitchen with the oven on, you can use sliced french bread, small bagels or even hamburger buns. And you're right, paidreader. Pizzas are easy to make. :)
