What about this?
PRAWN AND BANANA ROLL (makes 6 rolls)
Ingredients
3 sheets of rice paper
300g prawn
1 banana
1 egg, whisked
breadcrumbs
salt and pepper
corn starch
Steps
1. Rinse prawns, shell and remove the viscera. Wipe and cut into dices. Marinate the prawn with salt and pepper for 15 minutes. Pell the banana and cut into 12 slices.
2. Divide each rice paper into 2. Place 2 slices of banana and some prawn dices on each rice paper. Wipe and roll, and seal with water.
3. Coat each roll with corn starch and dip into the egg and coat with breadcrumbs. Deep fry until golden. Drain and serve.

There are heaps of things you can do that are quick and relatively easy.
What about homemade sausage rolls?
Get some sausage mince from the butchers, add chopped onion, tomato sauce, cheese if you like, really anything then roll inside puff pastry and cut into pieces?
Cob loaf and dip? there are plenty recipes around for them and they are so easy!!
I make a dip with a can of tuna, a tub cream cheese and a good squeeeze of lemon to taste.
Chicken tenders and dipping sauces, meat balls and sauces, mini dim sims, mini spring rolls, ribbon sandwiches, mini quiches, cocktail franks, pin wheels - puff pastry, cheese ham herbs and tomato paste, put on roll up slice then bake till golden brown.
You could also buy potaot gems and cook them in the oven. I have a few more ideas if that isnt enough!
Happy planning!

Here are a few recipes that I like using. The garlic pits chips especially....they are great with dips.
6 pita bread, 6 inch size
cooking spray
1/2 teaspoon garlic salt
1/4 teaspoon black pepper, freshly ground
Preheat over to 350.
Coat one side of each pita with cooking spray. Sprinkle the pitas evenly with garlic salt and pepper. Cut each pita into 8 wedges; arrange wedges in a single layer on a jelly-roll pan coated with cooking spray.
Bake at 340 for 20 minutes or until crisp.
This is a great dip too...
Black Olive Dip
1 (8 ounce) package cream cheese, softened
1/2 cup reduced-fat sour cream
1 (4 1/4 ounce) can chopped black olives
1/4 cup finely chopped onions
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper, to taste
Mix everything together until thoroughly blended.
Serve or chill until ready to serve.

Okay,here we go:
Pinwheels - these are basically wraps that you spread with cream cheese and then rolling them up. Then you cut them into pieces so they look like swirls. You can add whatever you like to the cream cheese to make them more interesting. I like using spinich wraps and then mixing the cream cheese with salmon or olives. They are really easy to make and people seem to like them a lot.
Pigs in a blanket - I know there are old school, but people really like them. I use cresent rolls and then sometimes add a little bit of cheese or mustard before rolling them up.
Other big hits are mexican 7-layer dip, brushetta (basically yummy stuff on toast), keilbasa in bbq sauce (cut up and served with toothpicks), nachos, stuffed mushrooms, stuffed cherry tomatoes (don't cook them, just scoop out and fill with a soft cheese), and chicken wings.
