What's the BEST filling to have in a sandwich?

What is your most favourite (to die for) filling for a sandwich?
Mine would have to be just plain old ham and cheese, maybe with a little tomato sliced up too, but that's not a necessity. Oh and grilled is nice as well.
I also love peanut butter. Smooth. Spread thickly on fresh bread, or on hot toast. Then there's the all Australian vegemite. That's great on fresh white fluffy bread too!
So because my suggestions are some what boring, what's your favourites? You may inspire me to get creative!

Lets see...
Leg Ham and tomatoes
Just plain tomatoes with salt and pepper
Cheese and tomatoes
A sliced boil egg with mayonnaise
Cold chicken with mayonnaise
Cold beef with tomato sauce
Any type of cheese you fancy
Any type of pate you fancy
If you want to get real fancy...
Take 2 slices of bread and butter them on both sides. Place some ham and cheese in your sandwich and fry both side of the sandwich in a pan.
Then you have your toasts
I like to slice a tomatoe on 4 slices of bread. Place some cheese on the top and melt the cheese under the grill.
And of course... you have your toast with jam or honey.

These days, I opt for toasted sandwiches because... well.. for no other reason than that they taste great! =D
I usually put leftover pasta dishes, meatballs or tuna with cheese, mustard & mayonnaise. It has to be on whole-grain bread though, because it's just so good! =D
Peanut butter and nutella sandwiches are also scrummy!
