I am really fond of cheesecakes. Does any of you have a cheesecake recipe to share? I'd really appreciate it.

I love cheesecakes too. Here's one that does not require baking:
2 eggs, separated ,1 cup milk
2 envelopes gelatin, unflavored
1 cup sugar,1/4 teaspoon salt
1 teaspoon lemon peel, grated
3 cups creamed cottage cheese,1 tablespoon lemon juice
1 teaspoon vanilla extract, unbaked crumb crust
1 cup heavy cream, chopped nuts, for garnish
In small bowl, beat egg yolks with milk until mixed; in 2-quart saucepan, stir gelatin with sugar and salt. Stir yolk mixture into gelatin mixture. Cook over medium heat, stirring, until mixture thickens and coats spoon. Remove from heat; add lemon peel; cool. Into large bowl, press cottage cheese through sieve; add lemon juice and vanilla. Add gelatin mixture. Chill about 30 minutes, stirring until mixture mounds when dropped from spoon. Meanwhile, press half of crust mixture in bottom of 9-inch springform pan. In small bowl with mixer at high speed, beat egg whites just until stiff peaks form; spoon onto gelatin mixture. Beat cream until soft peak form; spoon onto egg whites; fold egg whites and cream into gelatin mixture. Pour gelatin mixture into prepared springform pan. Sprinkle top with remaining crumb mixture and refrigerate until firm.

cheesecake is great to experiment with i made a fudge brownie crust with a baily's irish cream cheesecake, my god was it good, basically I put together 3 different recipes to creat this one.

Cheesecake

"A simple no crust cheesecake with sour cream topping."
INGREDIENTS
* 3 (8 ounce) packages cream cheese
* 1 cup white sugar
* 1/4 teaspoon almond extract
* 1/4 teaspoon salt
* 5 eggs
* 1 cup sour cream
* 2 tablespoons white sugar
* 1/4 teaspoon vanilla extract
DIRECTIONS
1. Preheat oven to 325 degrees F (165 degrees C). In a large bowl, combine cream cheese, 1 cup sugar, almond extract, eggs and salt. Beat until smooth. Pour into a greased deep dish pie plate.
2. Bake at 325 degrees F (165 degrees C) for 45 to 50 minutes. Remove from oven and let cool for 20 minutes.
3. To Make Topping: combine sour cream, 2 tablespoons sugar and 1/4 teaspoon vanilla extract and stir until smooth. Spread evenly on top of the baked cheesecake, then bake 10 minutes at 325 degrees F (165 degrees C) to set the top.
4. Let cool, refrigerate several hours before serving.

Good For You Cheesecake

"Quick, easy and lower in fat than most traditional cheesecakes.
INGREDIENTS
* 3 (8 ounce) packages Neufchatel cheese
* 1 cup white sugar
* 4 eggs
* 2 teaspoons vanilla extract
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Butter an 8x8 inch pan.
2. In a medium bowl, mix cheese and sugar until soft. Add eggs one at a time, mixing thoroughly with each addition. Add vanilla and mix to incorporate.
3. Pour into prepared 8x8 inch pan. If desired, sprinkle top lightly with cinnamon. Bake at 350 degrees F (175 degrees C) for 30 minutes. Cake will appear to be soft in the center. Allow to cool and it will set.

"Cake consistency cheesecake squares.
INGREDIENTS
* 1 (18.5 ounce) package yellow cake mix
* 2 eggs
* 1/2 cup butter, melted
* 1 pound confectioners' sugar
* 2 eggs
* 8 ounces cream cheese
* 1/2 cup butter, melted
DIRECTIONS
1. Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch pan (non-coated).
2. Beat together cake mix, 2 eggs, and 1/2 cup melted butter, and pour into prepared pan.
3. In a separate bowl, mix confectioners' sugar, 2 eggs, cream cheese, and 1/2 cup melted butter. Beat well and pour on top of first layer.
4. Bake at 375 degrees F (190 degrees C) approximately 40 minutes. Cool completely and cut into squares.
