Any ideas on low fat Mexican food?

Hey guys I need ideas for low-fat or fat-free Mexican Food. A lot of things I can change the beef to chicken and I LOVE pinto beans and brown rice. Do you have any ideas on making Mexican Food low or fat free? What have you done to make yours lower fat? I'm also Dibitic so my blood sugar is a concern too. That is why I eat brown rice and not the white.

I know that most of your mexican food has a lot of fat in it because of the oil it is cooked in! If you can find which of the cooking oils has the least fat in it , that would lower a lot of it! I don't know for sure which, I'd have to consult my cooking consultant(which is my ex-wife), which oil is the lowest fat!
I think I overheard someone say the other day , that if you grill it on a grill, you wouldn't retain as much of the fat in it also!

You can really make mexican food low fat. You can use ground turkey instead of beef also, and it tastes the same. I always buy the mexican rice in a bag that just takes water and butter to make, but I don't add the butter. I will also top it with fat free shredded cheese.

I'm reading this out of my e-mail inbox, do I can't see if anyone has suggested this. But a simple way to cut out some fat and sugar, is to get fat free cheese to use while you cook. Also, they have low fat and fat free sour cream. I can't take a difference in the sour cream.
Also, try using whole wheat tortillas as a substitute for a shell or quesidilles (I know I spelled that wrong).

Since I am vegan, I replace the meat with beans or soy ground meat alternative (Morningstar Farms Grillers Crumbles are a great tasting option). This cuts the fat way way low and it's a lot healthier because there is no cholesterol and no saturated fat.
A couple quick recipes for taco filling:
1. Mashed Garbanzo beans/Chickpeas: Pour one can of beans in a pan, add 1 or 2 teaspoons of taco seasoning (or make your own seasoning blend) and heat through while mashing with a potato masher or spoon.
2. Pour a bag of the Morningstar Farms crumbles into a pan, add 1-2 teaspoons of taco seasoning, 1/4 cup or so of water, heat through.
Delicious!
