There are no such news from official sources, so I would request my Muslim brothers not to spread this rumour that she embraced Islam, because Islam itself is against spreading rumours.
Allah says in the Qur'an what means: "O you who believe! If a rebellious evil person comes to you with a news, verify it, lest you harm people in ignorance, and afterwards you become regretful to what you have done." (49:6)

About Sunita Williams? We don't know, but most likely it's a fabrication just like happened about Michael Jackson and other well-known figures.

I have heard that a devout Muslim has to pray about 128 times during a 24 hour period, while orbiting the Earth. But I don't know how true this is.

A similar story was spread a few months after the first Moon landing. The story was that Neil Armstrong heard a loud chanting in the Moon, but was unaware what it was. Later when he visited Egypt he heard the same voice which was "Allah Hua Akbar" coming from a Mosque. As the Moon is sacred to Muslims Neil concluded that Gods message is echoing on the Moon and converted to Islam. Most people bought the story. This also simmered down the outraged Muslims upset over people setting foot on the Moon. But now another story that the Moon landing did not take place is gaining ground among the new generation.

The Moon may not be something sacred according to the teachings of Islam. But I know so many of my good Muslim friends who are outraged by the Moon landing and argue that it never took place and that it is impossible to do it. I think this is a result of not going deep into the religion.
There are Muslims who blame people producing piggy banks, and do not like to look at the picture of a pig, but when I was in Saudi Arabia the Porky Pig show was always shown on TV. Educated Muslims have told me that it it not the pig that is filthy, but actually the dog whose saliva should not touch your body. God created the pig with a large neck so that it cannot be halaled. It is actually a lucky animal.

"the Moon is sacred to Muslims"? lol, are you hoping people will buy that like they bought this stupid rumor?
And from among His signs are the night and day, and the sun and the moon. Do not bow down (prostrate) to the sun nor to the moon, but only bow down (prostrate) to Allah Who created them, if you (really) worship Him." (Qur'an 41:37)
