Pumpkins!

I am looking for some different recipes to use fresh pumpkins. I make pumpkins seeds, pumpkin bread and pumpkin pies. Is there any other uses for fresh pumpkin? I have found some recipes for soups using pumpkin, but I am not sure how that would taste. Can anyone help me? Thanks!

I have never prepared pumpkin soup too. I think it must taste a little sweeter than carrot soup because naturally pumpkins are sweet. However I have other recipes using pumpkins. One of it is for lunch and it is eaten with white rice and fried fish. Another recipe is to delicacy which can be eaten as dessert. Here I am going to give you the recipe for the dessert.
Ingredients:
1 small sized pumpkin (peel off and cut into 1" cubes)
350 ml concentrated coconut milk (can be bought in cans or boxes)
3 tablespoon grated coconut sugar (brown in color)or here we call it Gula Melaka or Gula Merah
1 tablespoon white sugar
3 pandan leaves
a pinch of salt (just a little)
Method:
Boil the pumpkin cubes with pandan leaves until it is almost cooked. Without putting off the fire, add Gula Melaka and white sugar and stir until the sugars are completely dissolved. Pour in the coconut milk and add in the salt. Stir and bring it to boil again with small fire. Taste it to see whether it is sweet enough. If not you can add more sugar. Now it is ready to serve. Serve in small dessert bowls. It can be eaten while still hot or you can put it in the fridge first and eaten while it is cold. It is delicious. I hope you will try it.

Pumpkin soup just doesn't sound very good, but I have had a lot of people tell me that it is great. I am going to have to give it a try, you never know if you like it if you never try it.
