I need new recipes and ways to cook zucchini. i love it more than any other veggie and eat it several times a week, but im getting a little tired of the same type. i usually just pop it in the oven for a few mins with butter or olive oil and oregano. i need something more inventive thats still an easy side dish. thanks for input!

I love zucchini too and usually opt for the simple method. However, I also have a few recipes that I use and am happy to share. ********************************************************************** Stuffed Zucchini Boats 6 medium zucchini 2 eggs 1 can (12 oz) corn, drained 2 T green onion, chopped 1 t seasoned salt 2 oz. sharp American cheese, shredded Cut ends off zucchini. DO NOT PARE. Cook in boiling water 5-7 minutes, drain. Cut in half lengthwise. Carefully scoop our centers leaving ¼ inch shell. Dice scooped out squash, drain. Sprinkle diced squash and shells with salt. Combine eggs, corn, onion, seasoned salt and diced squash. Spoon mixture into zucchini shells. Bake uncovered at 350 degrees for 25 minutes. Sprinkle cheese on top and bake 4-5 minutes more. ********************************************************************** Zucchini Fritters 3 small zucchini 1 egg ½ - ¾ c bisquick ½ c parmesan cheese 1 T parsley, optional 1 t garlic salt Wash zucchini, cut off ends and grate. Add other ingredients, mix well. Drop from spoon into well heated, greased skillet. Turn when brown. ********************************************************************** Easy Oven Broccoli 2 cloves garlic, finely chopped 2 ½ T butter or margarine 2 lb zucchini, shredded (about 7 ½ c) 1 t dried Italian herb seasoning, crushed 1 t salt 1/8 t pepper In a 12 inch skillet over medium high heat, sauté garlic in butter/margarine for 1 or 2 minutes or until a light golden brown. Add zucchini. Cook and stir for 8 to 10 minutes or until zucchini is crisp-tender. Drain off excess liquid. Stir in Italian herbs, salt and pepper. Serve immediately. Serves 4 (Express Lane Recipes) ********************************************************************** Squash Bake 6 c zucchini, thinly sliced 2 egg yolks, slightly beaten 1 c sour cream 2 T flour 2 egg whites, stiffly beaten 1 ½ c sharp cheddar cheese, shredded 6 slices bacon, crisp and crumbled 1 T butter ¼ c dry bread crumbs Simmer squash until tender, drain and sprinkle with salt. Combine yolks, sour cream and flour. Add whites. Place ½ squash in 12 x 8 x 2 inch pan and top with egg mixture, ½ cheese and all bacon. Melt butter. Stir in crumbs – sprinkle over all. Bake 350 degrees for 20-25 minutes.

What about a Zucchini Casserole? ZUCCHINI CASSEROLE 3 large zucchini (cubed with peel on) 1 large onion, peeled and chopped 16 oz. shredded cheese 1 can cream of celery soup 2 eggs (beaten) 2 tablespoons mayonaise 2 tablespoons sugar 3 cups bread crumbs 1 stick margerine, melted Cook zucchini and onion in enough salted water to cover, just until slightly tender. Drain and add next 5 ingredients and mix well. Pour 1/2 into 15 X 11 X 2 casserole. Stir margerine into bread crumbs and sprinkle 1/2 on first layer of zucchini mixture. Repeat layers. Bake at 350 degrees for 35 to 45 minutes.

Try these. Delish! Zucchini Patties Yields: 4 servings "Get out your grater or food processor, you'll need to grate up a bunch of zucchini. But this is what makes these patties fry up so wonderfully. A nice change from potato pancakes. Serve with a bit of tomato sauce or sour cream dabbed on top." 2 cups grated zucchini 2 eggs, beaten 1/4 cup chopped onion 1/2 cup all-purpose flour 1/2 cup grated Parmesan cheese 1/2 cup shredded mozzarella cheese salt to taste 2 tablespoons vegetable oil 1. In a medium bowl, combine the zucchini, eggs, onion, flour, Parmesan cheese, mozzarella cheese, and salt. Stir well enough to distribute ingredients evenly. 2. Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden.

Serve with your favorite sauce: sweet and sour, Tonkatsu, sweet chili, etc." INGREDIENTS * 1 cup chopped cooked chicken * 1 1/2 cups thinly sliced napa cabbage * 1/4 cup shredded carrots * 3 green onions, chopped * 12 fresh green beans, cut into 1/2 inch pieces * 1 small green bell pepper, cut into thin strips * 1 small zucchini, cut into thin strips * 3 eggs, lightly beaten * 3/4 cup all-purpose flour * 3/4 cup chicken stock * 2 teaspoons soy sauce * 1 teaspoon vegetable oil * 1/4 teaspoon toasted sesame oil DIRECTIONS 1. In a large bowl, mix chicken, cabbage, carrots, green onions, green beans, green bell pepper and zucchini. In a separate bowl, beat together eggs, flour, chicken stock and soy sauce. Pour batter over chicken mixture and toss to thoroughly coat. 2. Mix vegetable oil and sesame oil in a skillet over medium heat. This is my favorite zucchini recipe...Brown 1 lb gr beef or turkey with some onions. drain off all fat. In a casserole dish layer slices of zucchini with chopped tomatoes the gr beef and mozzerella cheese. Just keep layering until dish is full. Make sure the top layer is cheese. Bake at 350 degrees until the top is brown and bubbly. My grand daughter calls zucchini lasagna.

Have you tried looking on allrecipes.com? They are a free site and have THOUSNADS of recipes you can try! I get 99% of my recipes there.
