There's always potato soup, which is good in colder weather. I don't have a specific recipe, but you can always go to your search engine and look for potato soup recipes. Also, good ol' hash browns for breakfast. You can shred potatoes in your food processor (or just buy the frozen hash browns at the grocery store). That's a pretty yummy breakfast, added to eggs and bacon or sausage or whatever you like. You can always add whatever you like to the hash browns too, like shredded cheese, black pepper, anything really.

You can make home made potato skins. Just boil or bake the potatoes until they're soft inside, cut them into quarters, scoop out the potato and set it aside for something else later. Add whatever toppings you like. The standard cheddar cheese and bacon is good. I've also done cooked broccoli (diced) and american cheese. Grilled chicken and parmesean cheese is also nice. Cheese kind of binds it all together.

I make these all of the time.
Potato Latkes
6 servings
"Shredded potatoes and grated onions are bound with flour, salt and eggs, then fried in oil to make delicious potato pancakes that are crispy on the outside and tender on the inside."
2 cups peeled and shredded
potatoes
1 tablespoon grated onion
3 eggs, beaten 2 tablespoons all-purpose flour
1 1/2 teaspoons salt
1/2 cup peanut oil
1. Place the potatoes in a cheesecloth and wring, extracting as much moisture as possible.
2. In a medium bowl stir the potatoes, onion, eggs, flour and salt together.
3. In a large heavy-bottomed skillet over medium-high heat, heat the oil until hot. Place large spoonfuls of the potato mixture into the hot oil, pressing down on them to form 1/4 to 1/2 inch thick patties. Brown on one side, turn and brown on the other. Let drain on paper towels. Serve hot!

How about some cheesy scalloped potatos? This recipe is easy becuase it uses condensed cheddar soup.
4 cups thinly sliced potatoes (about 4 medium potatoes)
1/2 chopped onion
1 (3-ounce) can chopped mushrooms, drained, or 4 ounces sauteed mushrooms
salt
1 (10.5 ounces) can condensed Cheddar cheese soup
1 cup diced tomatoes (fresh or canned with juices)
1 cup herb-seasoned croutons
Lightly butter a 10x6x2-inch or 8x8x2-inch baking dish. Layer half the potatoes, onion, and mushrooms. Sprinkle with a little salt. In a medium bowl, combine soup and chopped tomatoes. Pour half the soup mixture over vegetables in baking dish.
Repeat layers, ending with cheese soup. Cover the baking dish with foil. Bake at 350° for about 1 1/2 hours. Uncover, top with croutons, and bake 5 minutes longer. Let scalloped potatoes stand 10 minutes before serving.

wow i love potatoes and there is so many different things to make with them.i have a few for you.first one is alfredo potatoes.4 large baking potatoes,1 cup of preparededo sauce,garlic powder,pepper,1 cup of schredded cheddar cheese,1/2 cup mozarella cheese.pierce the potatoes w/fork,place them in microwave for 6 minutes or until tender,cool off,in a bowl combine sauce,garlic,pepper.stir in 1/2 cup of mozarella.cut potatoes in half lengthwise.scoop out the pulp and add to the sauce mixture,mix well.spoon into potatoe shells.put rest of chedder cheese,microwave on high for 1 minute.next one is a really cool dish i make which is potatoe/pepperoni dish. 3 cups of shreddes hash brown potatoes,1/3 cup of onion,3 tablespoon butter,5 eggs,1/2 cup milk,1 teaspoon of italin seasoning,1/2 teaspoon salt,1/2 teaspoon pepper,30 slices of pepperoni,1 cup of schredded cheese of your choice.cook potatoes in large skillet w/butter and onion until tender and lightly browned.then in a bowl beat eggs,milk,seasoning,salt,and pepper.pour over potatoe mixture and sprinkle pepperoni.cover and cook on medium heat for about 13 min.remove from heat and sprinkle cheese,cover and let stand for 2 minutes,cut into wedges.serve.pattie

How about baked potatoes?... just cut them up in slices... just coat it in olive oil and sprinkle rosemary over it... salt and pepper to taste... yum... be sure to wash it carefully and leave the skin on... this is a more healthier take on our spuds...

yup, they're great and extremely easy to do... how bout this one... make shoestring fries of your potatoes and add them on your various recipes like basil pesto fish (i tried it recently in Bigby's restaurant and they are great in complimenting the dish), pizzas, tacos, etc. the list seems endles... potatoes for me is the world's greatest spuds

Ingredients:
2 CUP COOKED MASHED SWEET POTATOES----61/2 OZ.CANNED CREAM----11/2 CUP SUGER---3 EGGS,SEPARATED (WHITES BEATEN)-----2/3 STICK OLEO,CHIPPED----1TSP. VANILLA----1(9IN.)BAKED PIE SHELL
Directions:
MIX ALL INGREDIENTS EXCEPT EGGS WHITE.POUR IN PIE SHELL.BAKE AT 350 FOR 50 TO 55 MIN.COOL BEAT EGGS WHITES.POUR OVER PIE.BROWN LIGHTLY AT 450 YOU CAN SPRINKLED COCONUT FLAKES ON TOP

Potato Candy
Ingredients:
1/4 cup mashed potatoes (1 sm. potato)
(DO NOT USE INSTANT POTATOES!)
2 tbsp milk
1 tsp vanilla
Dash salt
1 lb box powdered sugar
Peanut butter
Directions:
Mix together all ingredients, except peanut butter. Add sugar until dough consistency. Roll out onto powdered sugar dusted bread board or waxed paper. Spread peanut butter all over. Roll it up like a jellyroll loaf. Cover and chill until firm and slice into bite size pieces.

I love them as well. My favorite is to take baby red potatos and cut them into four pieces, add as many potatos as you would like. Put in in a baking dish and add a little bit of olive oil fresh parsley or basil, grinded sea salt, grinded fresh pepper, and about 1/4 cup to 1/2 cup of champagne vignerette dressing. Bake for about 20 minutes. When you take it out sprinkle fresh parmesean flakes (shaved) and sour cream. It's really my favorite new way to make them!

I make roasted potatos. It is very simple. You put oil in a pan and put in a 350 degree oven. Peel and cut potatoes in cubes and season with salt, pepper, onion plakes, and garlic powder. Check oil to make sure it is hot place potatoes in hot oil and cook for about 15min on one side then flip. Remove when potatoes are done. This is also a good was to cook your carrots or parsnips. Let me know if you like it.
