I am looking to do more to give back to my community, but I want to do something really interesting. Anyone got any ideas?

That depends on where your passions lie and what you consider "really interesting". One way to find charitable organizations that you can choose from, is to go to the Better Business Bureau on line, select the area you live in, select Charities, and start exploring all the charity organizations out there. If you do not find one you feel strongly about, but know where there is a need, if you are real ambitious, you could even open your own Non-Profit organization. For example, Medicaid for kids does not usually include Porcelain caps for teeth that need Root Canals. You could start a Non-Profit for generating and allocating funds for Porcelain Caps for the poor.
All charities need to generate funding. You can coordinate events such as Trivia Nights, Golf Tournaments, etc.
Care facilities such as hospitals, nursing homes, animal shelters, food pantries, and even public schools, all have volunteer positions. Some need people to help with simple reading and writing. Most city and county governments need volunteers to sit on different committees and boards to help make decisions for community issues. These even include committees on Disaster 1st responders with Homeland Security.
There are a number of organizations that meet regularly such as the Shriners, or Meals On Wheels, or Angels home care providers. Girls and Boys clubs are always looking for help or Big Sisters/Brothers.
Many churches have community needs that they try to fill as well.
The possibilities are endless.
I am sure if you search, select a few, and talk with some people within your organizations of choice, you will discover an organization that is just right for you, who can use your skills, services, and talents in your community, that will be very rewarding and satisfying to you, and who will be very greatful to have you on their team.

Do you want to establish your own organization? What are your likes? Do you like to help people in poverty alleviation? Or are you into environmental cause?
I suggest that you do environmental literacy in your community through proper waste management, where all the recyclables are gathered together and sold to collectors, while the ones that are not useful can be picked by the trash collector. :)
