He is referred to as a Greyhound on the show, but he could possibly be a misidentified whippet, or just a really small Greyhound if the animator wasn't aware of the actual stature of a mature Greyhound.
Whippets are often used in dog racing, as well, so being a retired racetrack dog isn't indicative of his breed.

According to one of the sites that I read about The Simpson's, the dog is supposed to be a greyhound #8.

I would have guessed Santa's Little Helper to be a whippet, but the writers can take creative license. I've never seen an episode saying that he is a Greyhound, but I really don't watch Simpsons too often.

I do remember the episode where he was cast away by his ownner now. They did say he was a greyhound. I still think he looks more like a whippet, though! LOL That's cartoons for you.

MSV1313 is correct about the episode of the simpson that mention what type of breed Santa's little helper is. Not only do they mention it in that episode, the mention it in the first episode with Santa's Little helper. Homer works as a Santa in that episode, to get money to buy christmas because Mr. Burns isn't giving out Christmas Bonuses that year. I love the Simpson and watch at least two episode every week day and then ever Sunday.
