First Chili of the Year...

Well, today is the day that Hubby is making his first pot of chili for the year. He got up early and has been cooking up a little storm in the kitchen.
I help where I can but mostly stay out of his way. He soaked his beans (red beans) last night and started cooking up the meat and such this morning (below is a pic of the meat mixture with onions, green and red peppers and lots of spices). It's done now and he is in there enjoying it now.
He is so happy and he loves making his chili.
Is there a special dish that you look forward to making each year?

I love chili season. I have been waiting for it to get cool enough to be able to enjoy a nice warm bowl of chili. I love to put shredded cheddar cheese on top of mine:)

There's a season just for chili? Hmmmm?
It's chili time here in Minnesota whenever I make it.

In Ny there is a chili season. When the weather starts getting cold, then it is time to make that chili. When it is 80 degrees in the summer, no one wants a hot bowl of chili.

I happen to love chili, but I make it all year round and make a big pot and freeze some, I often go to Wendy's and order a container of the Chile and a baked potato with sour cream, mix the sour cream into the chili and pour over the baked potato, It looks like a dogs breakfast but is it ever good the sour cream makes a huge difference, and Wendy's makes pretty good chili, Cheap meal that I enjoy no end

Well, chili, absolutely. Also my homemade chicken vegetable soup and minestrone. Yum! One of the few things I like about cold weather is the food I cook when it's cold. Somehow food just tastes better anyway when the weather is cold. I also enjoy casseroles in the winter too.

Yeah, it's called turkey on Thanksgiving. lol I can eat turkey every day I love it so much. But it just seems to taste best on Thanksgiving. Maybe because I make all the trimmings with it then. I bought this marinade few years ago with honey in it and injected it into the turkey few years ago and boy was it good. I do it every time I make turkey now.

Oh yes, we also had chili for the first time this season the other evening and it tasted so good. Now that is what you call comfort food. Bob said he knew it was autumn when he smelled the chili. MMMMM good.
Nothing like the smell of burning leaves and chili to let you know the holidays are right around the corner. Then bring on the turkey bird LOL.

I love that you have your traditions in making the chili (like staying out of his way :) ) I love chili con carne and make it every few months. I have to make two versions - a mild one for my boys. They're not big on it but eat it because I make them :) I have some friends who taught me to make it years ago. She's Mauritian and he's English!

I don't have one personally but my husband loves to make spaghetti pie at easter. I think its spaghetti, eggs(not sure , pepper, grated parmeasan cheese I think he also uses.
Sometimes it comes out to peppery and I don't like to eat it.

Fantastic! We love chili, too. We have two other special foods we like to make. The first is beef tongue and the second is ox tails. These are cuts of meats that many people do not like or even do not know about. When we were starving students, tongues and tails were very inexpensive because they were not then considered gourmet items, and we pressure cooked them regularly. Now they are less readily available and more expensive, but we still love to eat them. We season them with cloves and black pepper, and also with Bay leaves that we gathered in the forest near our summer home.

No, there's not really any dishes that I enjoy making. But there are lots of dishes that I enjoy eating. lol Chili is one of my absolute favorites. I love it. It's one of the few things that I don't mind cooking too much. I also like pizza, lasagna, and salmon patties, to name just a few. But I'm not one to really like cooking. lol

It is getting to be that time of year huh? I love the smell of a huge crockpot of chili simmering on my counter. It is even better when I can bake some yummy cornbread muffins to go with it. My other favorite is my killer potato soup which is fabulous in the winter time. Nothing takes away the chill like a nice bowl of hot soup.

This is gonna sound funny but my Momma always made homemade chili & one night I had stayed over w/ a friend & they had chili -I told her Momma it was the best chili I had ever had then she told me it was only hormels canned chili LOL. I love chili non carne so I buy chili beans & spice 'em up .

There is a chicken and noodle dish that my husband makes for me when I get sick. It is so good but there is a lot of boiling in making this so the house gets hot. I do not make this in the summer because of the heat it puts in the house.
You take chicken and boil it down in a big pot of water with some boilian cubes. Once the chicken is cooked it just falls of the bones. The water or juice is not drained off. After you cook the chicken then you make mashed potatoes as well. You put the mash potatoes in the bottom of the bowl and then the chicken and noodles.
This is very good when you have a bad stomack and you need something to calm it down. I love this dish and wait all summer to get it.

This is the best time of the year for all those good warm Fall foods!...Yummy!
Especially Chili....I only make it in the cold weather and only have it maybe three times during the season. And of course, all the wonderful good tasting home-made soups at this time of the year...mmmmm.
My daughter's first pot of Chili is always on Halloween, it's sort of a tradition. Everybody goes over there (me too of course) and we all hand out candy and eat Chili and Hot Dogs!...Lots of fun!
