As far as i was told, you shouldn't give your children eggs until they're a little older, i think there's something in there that isn't good for them.
Kids will eat most things at 8 months & should be on meats & stuff around that age.
You can mix up anything you like, cook some chicken or any meat, add in some veggies & puree it, there you have a mushy meal, although at 8 months they don't really need puree any more so try something like Toast fingers - make some toast, put on butter, cut off the crusts & slice it in to strips - thats always easy! My daughter used to LOVE spaghetti (the instant canned stuff) & instant noodles at that age - just cut some of them in to small pieces & see how they go!
Oh my daughter used to love brocoli & carrot at that age too - just make sure it's boiled & soft, then try a little piece at a time, making it the right size for little fingers to pick up!
You can also give them anything you're eating (as long as it's not spicy), just use a blender or something to make it baby safe!
Good Luck!

Apple ‘Cado === 1/2 of a peeled and pitted avocado,1/4 cup applesauce. Mash the avocado half, Mix mashed avocado with applesauce.
Sweet Potato Custard === 1 cup mashed cooked sweet potato, 1/2 cup mashed banana (about 2 small), 1 cup evaporated skim milk, 2 Tbsps packed brown SUGAR, 2 beaten EGG YOLKS (or a cup egg substitute), 1/2 tsp salt , Nonstick cooking spray, as needed,1/4 cup raisins (optional), 1 Tbsp sugar, 1 tsp ground cinnamon . Transfer sweet potato mixture to casserole dish. Combine raisins, sugar, and cinnamon; sprinkle over top of sweet, Bake in a preheated 325º F oven for 40-45 minutes or until a knife inserted near center comes out clean.

I definitely agree that it should be mashed or blended. Finger foods are a good choice but sometimes the baby doesn't always get them in their mouth so you are not sure of what they ate. But as a supplement at that age is good. Finger foods I gave were Cheerios (cut in 1/2 at first), scrambled eggs, pancakes, cheese, etc. (all broken into little pieces).
