My favorites have changed a few times over the years as I grow and change. Nuriko is always pretty high on the list. I really like Amiboshi too.
However, my favorite is Hotohori, mainly for the same reason you mentioned. He loves Miaka unconditionally, and continues to love and protect her even after she chooses another. He is calm, collected, and patient. And oh did I cry when he fell. :P

My long time favorite is Hotohori. It's probably because we were quite alike back then. I even did a cosplay of him 8 years ago. ^^

I recently bought a DVD of this series because I kinda missed it so much. My personal favorite is Nuriko. I like his strength and the way he dresses as a woman. He's totally gorgeous.
I also like Tasuki and Tamahome because of their childish attitude.

My favorite Fushigi Yuugi character is Nuriko. He is really funny and cute. When I first watched the series long ago, I really hated "her" for treating Miaka so bad. But when "she" turned out to be a boy, I found him funny. He also later on treated Miaka nicely and even loved her as a boy. As a Suzaku warrior, he was the first to make the ultimate sacrifice, his own life, for Miaka and his fellow warriors. That was great, sweet, and nice...but sad. I love Nuriko! The manly Nuriko, that is.
