We use venison in all sorts of ways. Our favorite way is Venison meatloaf. It is not as fatty and has a wonderful flavor. We use ground venison in all sorts of recipes calling for hamburger. Spaghetti and chili are outstanding, also.
For a deer roast, I just put it in the crock pot on low in the morning, with onions and cream of mushroom or celery and just let it slow cook all day.

I always cook deer meat I am given with a really good barbecue sauce, or with the seasonings for chili. I cook the roasts like roasts and the ground meat like hamburger. It is a little on the lean side, so I can use a little oil or fat with it. The seasonings and sauces make it very tasty. I just use it like any other cut of meat.

I get deer meat all the time from the hunters that hunt on my farm. I like to make it into a stew quite often. I don't usually eat it unless it's mixed in with something else as sometimes (not always) it tastes gamey. When I do eat like a deer steak or something, I usually tenderize it by rinsing it off first, and tenderizing it by wiping some vinegar over it (and letting it set in the fridge a while first.) If I get it in the ground form, I use it just like I'd use hamburger in spaghetti, and things like that. Often, I will mix equal parts of regular beef hamburger with it, and nobody can ever tell the difference.
