Cho Chang is not a big character yet in Harry Potter and the Prizoner of Azkaban... Harry was too young that time to notice her and he was also too preoccupied with the thought of Sirius Black...
But in the fourth book... i think it was like a coming of age for Harry and Cho Chang was the best character to be involve with Harry...

On the third book - harry Potter and the Prisoner of Azkaban, was this only an introduction of the character? There are some sections in the book that they left out in the movies. Maybe this is one of them. This is one of the reasons that I like the books better. Just don't mind it.

I agree, Cho is not an important character at that point. There are many characters that are only in prior books as "background extras" in the movies as they would be 7 hour long movies otherwise.
