I am SO bored with the every-week-dinner-ideas. Burgers, tacos, spaghetti, and the dread hamburger helper! I'm looking for new dinner ideas that are INexpensive and actually have REAL ingredients! Haha What I mean is, I've found many really great looking recipes that I wanted to try but it called for a specific cheese that can only be found at a specialty food store that specializes in that particular cheese and there isn't a store like that in this side of the country! I need a inexpensive recipe where all the ingredients are found at Wal-Mart! Lol. Any ideas??

Here's one of my favorites Black Bean Chicken Enchaladas (I'm not 100% sure how real mexican this is but it's good) I think it's from Rachael Ray I'm not 100% sure where I got it except from food network.com Chicken cut up Jar of Picante sauce Black Beans drained Cup frozen corn (I've used a can drained and it worked fine) Skillet Cookie sheet or baking pan your choice really. Flour tortillas (The big ones lol) Pre heat oven t 350 In a skillet cook chicken. Add picante sauce, black bleans, and corn. Simmer for about five minutes or untill the corn is cooked. Then fill tortilla with cheese & picante mix (make sure to leave some in the pan for on top). It helps to do this in your pan or over your cookie sheet. Then add the rest of the picante mix over the top. Add cheese and back untill the cheese is melted. Enjoy. I have alot of other ones if you like this one just add me and I'll pm them to you.

I'd suggest trying a stir fry, It's basically any veggies that you like to eat cooked with any number of sauces, from soy sauce to something more exotic like a garlic sauce. You can buy the veggies fresh, and pick out a sauce that sounds good, and throw it in a pan and stir over high heat for a short while until the veggies are tender enough to suit you. Another option is buying a pre-made kit from the freezer isle. With either version you can add meat or not as you choose. We usually eat it over steamed rice.
