Hello Swatcash, My husband is doing the Atkins diet and he has lost 50 lbs in 3 months. (We won't mention that he put 6 lbs back on over the Christmas holiday) Here is a recipe for Spicy Chicken Legs, we all love these! Using a dry marinade enhances flavor and tenderizes the chicken. You probably have all these spices in your pantry. If not, all are well worth having on hand. 2 tablespoons canola oil 2 teaspoons paprika 1 teaspoon dried thyme 1 teaspoon chili powder 1/2 teaspoon dried cumin 1/2 teaspoon garlic powder 1/2 teaspoon salt 1/2 teaspoon pepper 1/4 teaspoon ground nutmeg 6 chicken legs with thighs, rinsed and patted dry In a small bowl, mix oil and spices. Rub chicken legs with spice mixture; arrange on a baking sheet. Refrigerate 30 minutes. Heat oven to 350F. Bake chicken 40 to 45 minutes or until cooked through. Also, here is the Atkins website address: http://www.atkins.com/recipes I have referred to this site numberous times to come up with ideas for dinner. Good Luck in your quest for a low fat & low carb diet. You will need to be creative to make things that are tasty and fit into your critera.
