The wonders of houmous

Hi! There are many natural snacks, and national foods. I have read that the by far healthiest national snack is Israeli Falafel and Houmous. My own recipe for houmous is as follows: Soak a handful of chickpeas in water overnight (NO salt yet), and next day change the water and cook in boiling water (still no salt - if you add salt the chickpeas will not cook!) Until you can easily mash them between finger and thumb. Mash in a blender with equal amounts of sesame sauce ("Tehina"), lemon or grapefruit juice and a few fresh garlic cloves. Now is the time for seasoning: Salt, pepper, olive oil, paprica, or use your imagination!! How to eat it? Simply - spread on a flat dish (you can spread it with a hollow and fill it with mushrooms, beans, meat of anything!) and wipe it of onto pita or any other flat bread. I am always looking for more recipies that are healthy and tasty - anyone have suggestions? http://www.davidben-gershon.bravehost.com

Yes, houmuos is so good. Thank you for the recipe. I used to make it myself years ago, very similar to yours but I used canned chick peas. For some reason or other I am now bying it ready made. I think it is because I always have to search around for Tahine as it is not available in my regular super market. Here is one of my favourite healthy recipes. Try it you will really like it. Lentil Soup with Spinach 1 ¼ cup of orange or red lentils , rinsed and drained 8 cups of water salt and pepper ¼ cup finely chopped cilantro leaves (substitute parsley if no cilantro is available) 2 onions finely chopped 4 cloves of garlic, crushed ¼ cup olive oil 2 cups (packed) shredded spinach - can also use swiss chard ½ cup lemon juice · Place lentils, water, salt and pepper to taste and cook over slow heat until lentils are tender but not mushy. About 20-30 minutes. Check a few times. · Meanwhile fry the cilantro leaves, onions and garlic in the oil, stirring until the onions are golden brown. Add this mixture including the oil to the lentils. · Add Spinach and lemon juice. · Simmer until spinach is wilted but still green. · Serve with extra lemon juice or lemon wedges Note: Scim off any grey scum as lentils are cooking Note: For a meal in itself you can add finely cubed sausage to the oil and cilantro mixture when frying, but personally I like it without meat products. Just very hot with extra lemon juice and crusty French bread. Bon appetit!

The times that i had Falafel in the US - It tasted awful, I do not believe that Americans know HOW to prepare falafel - by the way - falafel is basically fried Houmous... (Except that here there are several flavors of falafel - each one better than the previous - and all finger liking good!
