i have been told that there are three criterions which all Chinese food meet when it is put on the table:it must look good,it must smell good,it must taste good.
if all three are met the dish is considered a success.in restaurants especially, presentation seems to be a high priority, the look and smell of the food tempting the diner before he has even picked up his chopsticks.chinese restaurants opening in the west sometimes specialize in food from a particular province, but most offer a variety of cooking styles, covering everything from beijing style cooking to mongolian!

Hi, greensleeve, it seems you know so much on Chinese cuisine.
General speaking, there are 8 different cooking styles in China. Beijing style, as you referred to, is not so famous except Roasted Duck.
But if we classify Chinese cuisine into 10 styles. Beijing style is one kind.
Actually, many restaurants now usually offer dishes in different styles. For example, you can order Xichuan food in a Jiangsu restaurant.
Being good in colors, smell, taste is very important in Chinese cuisine. - As you said. So cooking Chinese food is not a easy task. So many Chinese are good cooks in house.

Hello Greensleeve! :)
I am chinese and grew up in a chinese environment. My Mom cooks very tasty and yummy chinese dishes! some even have weird ingredients in it.. but its sooo very nice.
I am so proud of this. :) I always bring food to my officemate and let them have a taste of the original chinese dishes. (you see there is a chinese fastfood here in the Philippines who claims to have authentic chinese cooking!!! - not even close to my mom's cooking!)
