Healthy Eating

Recently my mom found out that she is pre-diabetic and needs to watch her choloesterol. I am looking for healthy snacks and meals (all three) that I could make for her. They need to be very low in sugar and carbohydrates. I have found in difficult to satisfy these two needs and make a meal or snack that is truely enjoyable. Pasta is out, so are potatoes and rice. Any ideas would be appreciated.

i am on a reduced sugar diet...i am only letting myself eat 75 carbs a day and no added sugar...i'm learning there is a lot hidden out there! I have a few recipes on my blog...if you want to book mark it I will be adding some more soon...they are all under the category "food" on the right hand side. I started the blog in hopes it will keep me motivated!! http://lessafork.blogspot.com I've found since starting the diet I do not crave the sugars and breads as much.

High protein tuna lettuce wraps, vegetables with hummus (the spicy kind is killer!), Egg-Beaters... they all come in different flavors and there is a world of websites out there to help us. Thank goodness Splenda was invented! You can still use your favorite recipes... Look for a guilt-free flourless chocolate cake. Yum! Also, most of the fitness sites have excellent low-carb, low-sugar recipes. Try http://www.fitness.com and http://www.shape.com. They usually have great stuff. Check it out, and you don't have to buy their magazines! At about.com (www.about.com) you can register to get a newsletter for diabetic cooking, as well as healthy and low-fat cooking. There's so much out there to choose from, the possibilities are endless.
