Do you ever find yourself loading up on vegetables at the grocery store

and they sit in the fridge? I love vegetables, in casseroles, with herbs etc. I seem to lose the inspiration to cook them at supper, or totally go blank on HOW to prepare them. Salads aside. when I go out to eat and there is this wonderful arrangement of veggies on the side of the plate, that is the first thing I go for. I need some quick, easy and flavorful ways to get back in the healthy groove of at least five helpings a day. Broccoli for instance. Steamed, with cheese sauce, broccoli salad - surely there is something else to do with this?

I have had this happen only because my week went terribly awry and my cooking at home was not able to happen. I never allow waste however and make what I call end of the week refrigerator soup. I use those older beginning to wilt vegetables in a chicken broth and before you know have a wonderful hot soup. Which as cold as I am right now I could deal with. If you have any meat left over at end week throw it in there add your favorite seasonings.

You know, as easy as this sounds, I've forgotten about it. I used to make up a stock pot soup when we lived back east. The move, new kitchen, etc. seem to have drained my head of some of my old cooking habits.

Ziploc Steam Bags. You just add whatever vegetables you feel up for, add some spices, butter if you want, and throw them in the microwave. They even tell you how long to cook them on each bag. The longest part of the process is cutting up and cleaning the vegetables, but it's worth the work. You can also cook potatoes easily in these bags. With very little clean-up, these bags have become my friend.

I don't eat cooked veggies much. I think they lose their flavor, and I really don't like when they are mushy. It just feels nasty in my mouth. If I buy fresh veggies, I'll admit, it's for a salad more often than not. I'll eat some fresh fruit, though my teeth hurt from the sweetness of that. I usually have my veggies frozen. Then I put them in a microwaveable bowl, add a smidge of butter, and nuke them for a few minutes. They come out crisp and tasty!

Broccoli is one of my favorite vegetables. I mainly eat mine steamed or in stir-fry. The thing that I buy that ends up going bad is lettuce. I will buy Romaine lettuce thinking that I will make salads or wraps but I never do, or I will use just a tiny bit and the rest will go to waste. I try and eat veggies to, I love them I am just not very creative with them. I get the most veggies in a meal when I make stir-fry.

I typically buy the same type of vegetables over and over. I cook at least one vegetable every night with dinner. I usually serve my broccoli steam with just a little butter spray. My kids love it that way. I also like to use broccoli in a stir fry with a lot of other veggies.

Since I am a Dairy Vegetarian, I eat vegetables all the time. I like them raw sometimes, dipped in different sauces that you can either make youself or buy at the store. They are great for a sit in front of the TV or computer dinner. Broccoli creamed soup is awesome. You can cheat by buying instant cream soup and adding the milk and fresh broccoli. Do the same with any or a variety of vegetables together. Broccoli salad is just shredded broccoli like you would do with cabbage. Just add carrots and any other veggie that seems like a good idea to you. Stir fry with chicken is always fun if you eat meat. You do not have to have a wok. You just have to keep the food moving for the best results. Any veggie and chicken cut real thin and sesame oil w/sesame seeds is good. I just do it w/o the meat. Shalom~Adoniah

So you don't necessarily need a marinade or sauce, just sesame oil with seeds for the flavor? Sounds good.

This has happened to me in the past. Now I work on having veggies with a lot of my meals since they are healthy and I have to include them anyway.

I do not normally stock up vegetables. I will go to the supermarket to buy whenever I want to cook, to ensure freshness. If buy and stock up in the fridge, the vegetable will be no longer fresh and will turn yellow very fast.
