I'm a big fan of toast and variations thereof myself. Cheese on toast, beans on toast, egg on toast, etc. Haha. Also a nice variation of meals that can get boring is adding things to things. I'm sorry I'm not very eloquent. For example I really like tuna mixed with macaroni cheese. You can probably tell I'm not much of a cook, sorry!
Also, perhaps browsing your supermarket value ranges could help and spark ideas? Or there's a wide variety of cookbooks specifically aimed at those on a budget that you may think about investing in.

Haha, sorry. I think I came up with the tuna thing one day when all I had in was a tin of macaroni cheese & a small thing of tuna. It's a bit like a tunamelt I guess? Woe for your evil toaster!

There are plenty of resources online to find recipes. I like www.kraftfoods.com You can save your favorite recipes in a recipe box right on their website. Be careful you don't eat a lot of pasta, rice, bread, etc. While they are cheap and filling, they also will contribute to the "freshman 15"! If you have a freezer you can make a big batch of chili or something and freeze it in individual portions for quick meals.

I'll tell you a few of my son's favorite meals. He makes burritos - beans, rice, cheese and salsa. Very easy to make and very economical. Making the rice in batches is easy and get the rest on sale.
Refried beans over rice. You can add the salsa again and the cheese or lettuce, tomato, avocado like a taco.
Pasta casseroles. Get some canned soup, some cooked pasta and add whatever you have on hand - canned or frozen vegetables, some cooked chicken, ham, hamburger. This would last for a number of meals so make sure you like it. I don't approve of the canned soups because of the sodium, but you can't beat them for good casserole starters.
Soup. Make a stock pot of leftovers, add boullion and you have soup with a 99 cent loaf of french bread.
Pancakes are always economical. Scramble an egg to go with it if you want.
