Simple roast of chicken

Tricky without an oven. You could barbeque it if you have one. You could build an open fire (outdoors) and pack the chicken in tin foil in the ashes and leave it for about three hours or spit roast it. You do this by impaling the chicken on a long metal spike. Mount the spike on two supports either side of the fire and then slowly turn the chicken whilst the fire's heat cooks the chicken. You need to have the heat circulating the meat in order for it to roast properly. Rub butter (you could try ghee instead) and salt into the skin before cooking. Of course you could always find someone with an oven. Good luck.
