Gourmet Chicken Salad

My boyfriend and I were at Anderson's General Store yesterday. I love that place! Anyway, he wanted to buy some gourmet chicken salad. It looked terrific with the dried cranberries and walnuts in it. I said, I can make that and for much less than the $7.99 a pound! I had some left over chicken at home anyway. I came home and made about a pound of it and I'll tell you, it is great! I made my chicken a couple of days ago (skinless, boneless bre*sts) in olive oil, salt, cracked black, sage and rosemary). I cut it into small bite sized pieces, added a little handfull of the dried cranberries, another handfull of walnuts, celery, purple onion (they don't look red to me) a bit more salt and cracked black, real mayo. Let me tell you, it's fresh, and costs much less than what you can get at the store and it only took a few minutes! It's what's for lunch today! I have also made chicken salad with the grapes and not cranberries and it is real good as well. Any good chicken salad recipes out there?

I have never tried dried cranberries in my chicken salad. I do like to experiment with chicken salad though. I have had it with halved red grapes and pecans before and it was yummy. I might try the cranberries sometime, but I will be putting pecans with them. I do not care for walnuts.

I like pecans too, I just had the walnuts. I also have some slitered almonds that would have been real good in there, but my boyfriend voted for the walnuts. I like them both, so it's OK with me. Yes, it's fun to experiment while cooking.

The only thing I do a little different with chicken salad is add a little sour cream if I have it on hand. I like the the seasoning mix you used on your chicken, Will try the sage. I did a search on chicken salad and one really good source was about.com in the southern food category - tons of different ways to make chicken salad. One with bacon and water chestnuts, one with pineapple, raisins, sour cream, mayo, I bookmarked this for future reference. Needless to say, you have prompted another trip to the grocery store...whit

I always have sour cream and use it in everything. I don't know why I didn't think of that. I'll bet the bacon would be good too. Humm, pineapple, I'll have to experiment more and more. I eat a lot of chicken salad and tuna salad in the warmer months that hopefully will be here real soon.
