I usually make a cassarole out of it. You can use so many different things-- noodles, cream of chicken soup, cheese and chicken pieces. Add frozen veggies to it with noodles and cheese. I always keep home made BBQ sauce in the fridge so I can add BBQ sauce to it.. Hope this gave ya some ideas.

Left over baked chicken goes great in soups and stews, fried rice, sandwiches, chicken salad, green salads, tacos, green chicken enchilades, and much more.
Even good in tortilla soup or taco soup.
There's no limit to left over baked chicken.

If I had left over baked chicken, I would shred it off the bone and then put it in a taco seasoning mix and use the mixture for having chicken wraps/burriots! I'd shred some lettuce, dice a tomato, provide sour cream and black beans and let folks put whatever they wanted in their wrap!

Cut it up and use it in lots of things:
Fried rice
Chicken salad (for sandwiches)
Mix with noodles and veggies
Cube and put on top of a salad
With alfredo sauce over noodles or spaghetti

Try to saute crushed garlic, minched onions, chopped ripe tomatoes in EVOO... add cup of chicken broth... chopped fresh basil... salt and pepper to taste and oyter sauce. Simmer until thickens and add the left-over chicken. Serve and Enjoy.
