how to cook boudin?

i have bought some louisana boudin and i like it but i dont want the skin chewy and i dont want it dry
any advice

The only time I have ever bought the sausage it has already been cooked. I know that if you cook it in a 250 degree over for 50 minutes (30 minutes on one side then flip for 20 minuts on the other side) the sausage is suppose to come out perfect.
