I love the addition of chili to almost everything. Chili on it's own, however, seems to be one-dimensional. It needs the extra flavours of other herbs and spices - cumin, cardamom, tamarind, garlic, coriander - nothing should completely overpower but each should take its bow and 'solo' and then combine to make a symphony!You can tell, perhaps, that I am fond of Indian food as well as East Indian and Chinese. Is that strange from a meat-and-two-veg Englishman?
