Scrambled Eggs - Low and Slow or High and Fast?

Most of my life, when I've made scrambled eggs I've had the heat on high and they'd be done in no time at all, probably less than two or three minutes but several months ago I saw several different cooks on the Food Network preparing scrambled eggs very slowly on low heat. Since then I've started to make mine that way and I must admit they ARE better. Lighter, fluffier, more tender and certainly they LOOK nicer. How do you fix yours - low and slow and high and fast?

I used to cook them at a high heat, so they would get done faster. I also saw something on a cooking show(don't remember which one) about them being more tender if you cook them slower on a lower heat. I have made them that way ever since. You are right, they do taste better.

Actually I cook them on medium heat. I whip them with a fork in a bowl with salt, garlic, pepper and some milk. Yum.

I do mine in the microwave with lots of butter! Takes about 30 seconds! 10 seconds, stir, 20 seconds, done.
They taste great...but doesn't anything with lots of butter!

hello everyone!
initially da heat is high so dat da pan is enf warm and den when i put on eggs ..i make da heat a bit slower and den in da end a bit more ..can say medium ...
dis gives egg a gud colour..and it is cooked completely otherwise it remains unripe frum inside and while eating dat creates a smell in it !
i add sum onions,salt,pepper or red chillies in my egg.
Usually early in da morning em in a hurry so dont get tym to make eggs on slow heat so da normal heat is ok wid it!
can anyone have new recipies regarding breakfast ...em tired of havin eggs and bread daily !
something that is very instant and delicious and with simple things available @ home..avoiding cheese !

This is pretty simple, but how about cereal? Or fresh fruit is always an excellent choice for breakfast if you like fruit and have it available. Any fruit will do in just about any combination. Bananas with peanut butter and a little honey is also good - with or without toast.
