yummy Chocolate Cake

An easy, everyday chocolate cake which can be filled with butter-cream, or with a rich chocolate ganache for a special occasion.
Ingredients:
Serves 6-8
115g plain chocolate, broken into squares
3 tbsp milk
150g or 2/3 cup unsalted butter or margarine, softened
150g or 1 cup muscovado sugar
3 eggs
200 g or 1 3/4 cup self-raising flour
1tbsp cocoa powder
For the butter cream
75g or 6 tbsp unsalted butter of margarine softened
1 1/2 cups icing sugar
1 tbsp cocoa powder
1/2 tsp vanilla essence
icing sugar and cocoa powder for dusting
Procedure:
1. Preheat the oven to 180degrees C. Grease two 18cm round sandwich cake pans and line the base of each with non-stick baking paper.Melt the chocolate with the milk in a heat proof bowl set over a pan of simmering water.
2. Cream the butter or margarine with the sugar in a mixing bowl until pale and fluffy. Add the eggs one at a time beating well after each addition. Stir in the chocolate mixture until it is well combined.
3. Sift the flour and cocoa over the mixture and fold in with a metal spoon until evenly mixed. Scrape into the prepared pans, smooth level and bake for 35-40 minutes or until well risen and firm. Turn out on wire racks and leave to cool.
4. To make the butter cream, beat the butter or margarine, icing sugar, cocoa powder and vanilla essence together in a bowl until the mixture is smooth.
5.Sandwich the cake layers together with the butter cream. Dust with mixture of icing sugar and cocoa just before serving.

I don't like to bake cakes anymore, but I had a very good chocolate cake for my birthday last weekend and it was moist and melted in your mouth.
