Authentic Mexican cuisine

I always thought Mexican food was represented by Taco Bell or those cheese-laden diet-busters I ate at popular Mexican restaurants. Well, I was so wrong! I was remembering this morning, having gotten a craving for Mexican food for breakfast, that a friend of mine took me to an authentic Mexican restaurant a couple years ago. I was shocked to see that there was very little cheese on the food! I thought it was going to be awful but what heaven! I didn't even miss the cheese, it was so tasty and my diet didn't exactly suffer, either! Real Mexican cuisine uses wonderful spices and sauces to enhance the flavor of wonderful meats and vegetables. SO much better than what we Americans usually think of as south of the border food. And healthier! Too late for breakfast, I ate while I was canvassing the kitchen for ingredients, so I'll have some as-authentic-as-I-can-make-it Mexican for lunch, yummy!

Wow, I don't even remember starting this discussion! Thank you so much for the link, I love green salsa. I prefer to make my own food these days instead of buying canned or frozen--I don't enjoy cooking but I don't like eating all those preservatives and excess sodium, either! That's great your husband is teaching you to cook. My mom and dad were in Texas in the 40's and a neighbor was going to teach her to cook authentic Mexican dishes but they didn't end up staying very long, dad got homesick.

Good mexican food is soooo good. They use a wide variety of spices and herbs. Some people believe that to be a mexican dish it must be hot. Some is hot but most is just flavorful. The shredded beef for tacos is very good and does not have to be spicy hot. Carne gasada is not hot at all but is full of flavor and is good over rice or in tacos.Cheese is included in many dishes, but not in everything. Calabisita is a very good mexican stew with squash, tomatoes, onions, corn and usually lean pork; cooked with herbs and spices go good. aroze con pollo is also a good dish that does not have to be spicy hot and is very tasty Mexican does not always mean spicy hot, just spicy good.

Yes! "Spicy good" is a great description! When I lived in Arizona, it seemed that people would be trying to impress others by asking for the hottest salsas and sauces, so hot that it would overpower the flavor. This, I thought, was such a disservice to the cuisine. My favorite was the tamales make by an old Mexican grandmother near my (then) husband's office, they were spicy but the spice enhanced rather than overpowered the flavor and didn't set my tongue and stomach afire. :-)
