Looking for a meatloaf recipe BUT it can't have ketchup or catsup in it - LOL

My ex-MIL, Betty Noll, use to make the best meatloaf in the world. She was such a wonderful MIL, I would buy the ingredients and she would make them up for me and freeze them for us. When I split with my husband, the last thing on my mind was getting the recipe. She has since moved and I have lost contact with them. Has anyone ever heard of a meatloaf that is moist and has a brown gravy instead of a red gravy? I'm willing to try everyone to see if it is anywhere close to what I remember. Thanks so much!!

Have you tried looking for recipes online? I don't have a traditional recipe for meatloaf that doesn't have ketchup in it. But I do have a meatloaf recipe that is actually called a casserole. It doesn't have ketchup in it and it is one of my families favorites. If you want the recipe to try it let me know.

I never use ketchup in my meatloaf. I mix my gr beef with bread crumbs and salsa. I sometimes mix in a little shredded cheeses like cheddar or pepperjack. I think you could mix your gr. beef with bread crumbs,eggs and chopped onions then top with a basic beef gravy from a jar to get what your searching for. Good luck I hope you are able to recreate the recipe.

I don't use ketchup in my meatloaf at all. I just do ground beef, egg, bread crumbs (or other binder), seasoning, onion sometimes carrots or bell pepper. The meatloaf is super moist so no need for gravy. My husband made meatloaf once and spread mayo on top, not much maybe 1/8 of a cup. That was actually really good, but a bit heavy on the calories.

Try putting BBQ sauce on top instead of ketchup. That is what I use and it adds a tangy flavor to it.

I chop up some onions and peppers and that helps to keep it nice and moist without using gravy or catsup at all. Just mix some bread crumbs and an egg with the meat, add a little salt and pepper, some parsley, and the veggies. Cook it in a loaf pan for about an hour on 350 degrees or until the meat is cooked through. It always comes out moist and delicious.

I believe I was watching the food network's "Throwdown with Bobby Flay" and they were saying no ketchup in the meatloaf... I have always eaten it that way and couldn't imagine it any other way... although they said it was REALLY good. Hope you are able to find it... yourfreecooking.com is a place you might want to look... my wife gets a lot of recipes from there. Thanks Zelo

Well, I don't have a recipe for a meatloaf with a brown gravy although I HAVE used mushroom gravy on top instead of ketchup or barbecue sauce before, generally with a meatloaf that was heavily laced with mushroom slices. Another interesting meatloaf option for you if you're interested is a "tex mex" meatloaf I made for a friends kids once, they LOVED it and I've since made it for myself several times. Take 1 lb of ground beef and mix it with 1/2 - 3/4 cup of your favorite salsa and 1 cup of shredded cheddar cheese. Form it into a loaf and top with enchillada sauce. Then you bake it as long as you would normally bake a meatloaf at 350.

I wonder if it had sauteed mushrooms in it and uses a beef gravy mix perhaps. Ilove mine with brown gravy and with pureed tomatoes but not catsup as the flavors do not blend well.my mom also made a meatloaf with a very good brown gravy out of the meat drippings I guess.

my mom uses tomato juice in her meatloaf. it's not as sweet as ketchup. i think she might add some tomato paste too, to thicken it up, thus creating the sauce or gravy to put on it.

just us a basic recipe and replace the ketchup w/ bbq sauce its actually better.
