Which vegetables eat raw?

I eat a lot of raw vegetables with the exception of beets, winter squash, green beans and corn. One of my favorites is broccoli with ranch dressing. I love good, crunchy salads. Raw cabbage, lettuce, tomatoes, cucumbers, peppers, onions, cauliflower, celery, carrots, potatoes, peas...

Many of you eat raw cauliflower and potatoes... I never eat them raw... are they good?

I like raw carrots and celery, all other vegetables I cook except salad. I like stir fry's too though where the vegetables are still crispy and I hate over cooked vegetables I like them to still be a bit crunchy. I also like raw tomatoes though technically they are a fruit.

I mostly eat tomatoes, green beans,cucumbers lettuce (especially dark green spinach because it's really good for you), and sprouts raw. I have also eaten other veggies raw, although I don't prefer them raw: potatoes, corn, and others.
I guess there is this raw food diet though that helps you eat just about anything raw.
I do realize that some of what I call "veggies" others may call fruit. To each their own, because some raw fruits taste better than raw veggies and are just as good for you.

I'll eat most vegetables raw. The list of ones I don't eat raw is much shorter: potatoes, yams, corn, etc... You know, the ones you're not supposed to eat raw, or they don't taste right. I especially love to eat raw carrots and cucumbers. They're so extra tasty.

i don't like cucumber, it taste is too acid...
