You may think this is crazy but try it once and you'll be hooked. One word: mayonnaise. Yes, indeed. You get yourself any chocolate cake mix and substitute the 2/3 c (or whatever the measurement is) of oil with a full cup of regular mayonnaise (not light, not extra-heavy) and you will wind up with the most amazing, moist, delicious cake you've ever had. Figure out a way to incorporate it into one of your own recipes and you'll become a millionaire. Think I'm crazy? It'll cost you two bucks max to try and prove it. Do it. You know you want to now...

I'm not a chef. I've just been cooking since I was six and I've had loads of practice trying different things. I have only ever used mayo as a substitute for oil in a pre-made mix but I would assume it would work fine in any scratch recipe that calls for 2/3 to 3/4C of oil as part of the cake batter. I've used mayo in regular yellow cake, too, with good results. After all, what is mayonnaise? It's predominantly oil and water held together by eggs. This concentration of ingredients amplifies the flavor of the cake. It makes the cake twice as moist (extra water and oil) and twice as rich (extra egg).

your suggestion sounds interesting:) thanks rest assured i'll try it:) can you be my friend...i'm positive i could learn a lot from you.i hope you could enlighten me more, again thank you...you may not be a chef, but for me you are one:) No international school can compare if your in for some experiments because from what you're doing comes out the great recipes,more power.
