Although there are a lot of things that we can do to keep ourselves healthy,like taking regular exercise,sensible eating,trying to keep our stress levels down having 8 hours sleep etc. a lot of our health issues will be down to our DNA.

This is true. If your ancestors come from an area where there are lots of fruit trees and bushes and vegetables, you will need more vitamin C if you move farther north and therefore you will be more inclined to get the flu or colds. If you start to eat more dairy and meat, you will be inclined to get strokes and heart attacks, whereas if your ancestors lived in those place, they can get lots of steaks and drink gallons of milk without it affecting them.
So if your ancestors live in an area where there was lots of food during the summer months, and hardly any in winter, it develops into a feast or famine and the result would be that you may come down with diabetes.
Now the trouble is if you have one set of ancestors from the always fruitful year round area and one set of ancestors from the only in summer fruitful area, and you may or not have the risk for diabetes, heart conditions, getting colds easily, etc. So in view of that, we all should be careful.
